Local mountain bike racers, Quinn and Lisa Schultz, along with their daughter Colavita-Fine Cooking pro rider Whitney Schultz recently started Peritus Coffee Roasters. When not on the bike, Quinn is a veteran home-roaster and pumped to bring his love and skill of craft coffee to Fort Collins.

All their coffees are carefully selected through Coffee Shrub who pays utmost attention to both quality of the bean and ethical sourcing. Currently limited beans can often be found at the Source Endurance Training Center of the Rockies after classes but can also be ordered online. Free local pickup and delivery. A great, local gift idea! You might wonder what “peritus” means. In Latin, it  is defined as skillful and practiced…the skill and practice to bring you an excellent cup goes through many hands from the farmer, to the processor, distributor, roaster and coffee preparer…all those hands deserve to be celebrated!

Howling Cow Cafe opened on July 1st, 2014, adjacent to Morning Fresh Dairy Farm hq, almost exactly a year after the Bellvue Bean closed down. That was a tough year for cyclists who were used to a mid-ride coffee break while doing the Dairy Loop. Lori and Robert Graves, the owners of Morning Fresh, managed to fill the void left by the Bean and then some.
