Last week on 10 Tracks we heard the tuneage of Rees York, the 2017/2018 CSU Rams Cycling Team president. This week we continue with the series and we hear from the current co-president, Katie Paradis. Kate is studying mechanical engineering at CSU. For recovery rides Kate listens to Slow Cheetah and Encore from the Red Hot Chili Peppers. Her go-hard picks are below. 

Favorite Bike: My Santa Cruz 5010 with all RockShox suspension and SRAM Eagle. She’s a beauty and a beast. 

Favorite Ride: The trails over in Salida are by far my favorite I’ve ever ridden. Bonus that I always ride with my dad there and he’s my favorite ride buddy.

Howling Cow Cafe

Howling Cow Cafe opened on July 1st, 2014, adjacent to Morning Fresh Dairy Farm hq, almost exactly a year after the Bellvue Bean closed down. That was a tough year for cyclists who were used to a mid-ride coffee break while doing the Dairy Loop. Lori and Robert Graves, the owners of Morning Fresh, managed to fill the void left by the Bean and then some.
